Savory Vegan Shepard’s Pie, It was for Dinner
I finally got around to making myself a huge Shepard’s Pie on Wednesday and proceeded to eat it for dinner after making the lentils on Tuesday – I seem to be experiencing some lag in my life. I made Savory Herb Gravy for Christopher by Road’s End – it literally took under a minute to make, and the packets cost only $.79 on sale.
For some reason these are loading sideways, even though they are saved the correct way, so enjoy a Sideways Shepard’s Pie. Because of my laziness of late, and the lack of mashed potato mix, I opted to heat 6 potatoes in the microwave, cut them in half, blend the in the food processor with the skins on and a tablespoon of margarine, should have added a little soymilk, it came out pretty thick. Baked for 35 minutes at 325 degrees. This time I went with lentils, spinach, onions and carrots inside and 1/4 cup of bread crumbs to thicken it.
