Vegan Breakfast & Lunch Lately
GERD hasn’t plagued me since before my son was born – and then I thought at times I was having a heart attack, my parents actually drove me half way to the hospital at one point. After his birth I had occasional problems, mild at worst, stemming from late night snacks or water. Last week started my road to ruins – the
baby is very high up in my abdomen (maybe not helped by all the downward dog, folding and inversions) and getting to be large – so I assume this has prompted my smooshed stomach to rebel. This leaves me with little room to negotiate my hunger. My staples have become Oatmeal, Cereal, Mac n Cheese, and Vegetable Stir Fries or Steamed Veggies.
Here are two of my favorites – and I will be honest Kashi Strawberry Fields is one of the best cereals I have found, there are 5 ingredients (I can pronounce them all) but it is not high in vitamins or nutrients as a lot of people point out about natural and organic foods. Now, the Mac n Cheese rocks, it is high in protein, low in fat and only 2 servings per box so even if you can eat the whole box, you are only at about 650 calories or so.
Now the red box, shells are my favorite, but they ran out at the store so I had to go with the wheat spiral things. They also make gluten free and Alfredo.
Road’s End, if you can find it, is the maker of powdered cheese substitute, and a line of gravies.
I give both 6 stars because they are helping me get through a tough time.
